We call them Butternutters.
It wasn’t until we started gardening that we fell in love with Butternut squash. It’s fairly easy to grow around here and once picked they last for months in your pantry! We usually go crazy and grow more than we can possibly eat in a season. Thankfully, it’s no problem as this winter squash cooks up quick and the golden pulp stores beautifully in ziplock bags to be frozen and used year-round.
When our babies were little I would stir the cooked squash into their applesauce. Now this veggie it finds it’s way into spaghetti sauce and even unsuspecting muffins and pies.
What is your favorite way to eat this squash, savory or sweet?

Love Butternut squash! Like it with butter and brown sugar or xylitol. OR roasted with lots of other veggies. Great!

Yeah! Yes you will love it… the squash is tender and yummy simply with butter, salt and pepper, but my favorite way to eat it is the Black Bean stuffed Butternut squash!
